Most people who do not live in Bangkok are under the impression that, we who live here are golden brown from hanging out at pools and basking in the sun all day. While this may be true for some, most expats that live in the big Mango, probably work longer hours than they ever did in their home country. This means many of us only see the sun on weekends or as we scuttle from one air-conditioned building to another. Days spent lounging at a pool with a drink in hand are far and few between. Missing those idealistic days when we first moved, when we did have time to hang out with a cocktail in hand and bake ourselves in the sun.
In memory of those days, I bring you a veganized version of the Pina Colada. This one is watermelon based with a twist of basil (that Thai touch) and can be virgin or alcohol based (sometimes Yogis enjoy a drink too).
1 can of organic light coconut milk
a pinch of salt
4 cups of chopped watermelon
1 tablespoon of lime juice
1/3 cup of filtered water
3-4 basil leaves for garnish
Options for alcohol:1-2 oz of dark rum, tequila, or vodka
Blend the ingredients for the watermelon juice. Keep in it the blender.
To mix the cocktail: If you would like to add alcohol, add 1 or 2 ounces of the alcohol of your choice to the watermelon juice in your glass. Slowly add in the coconut milk, and stop to taste along the way. You might like a lot of the coconut, or you might just like a little, best to taste and settle for what suits your taste buds. Serve over ice, with a few leaves of basil as garnish.
